
Hi!!!
My name is Nikanksha and I am a senior in high school. I live in New Jersey and moved from India to the United States of America in 2022. I've been in the USA for more than 2 years now and I am loving it so much! It is so pretty and I love my school. I started this blog/website thing as a way to finally act on my thoughts and work towards my goal of one day, having a food blog where I post recipes and review restaurants. I hope you enjoy going through this website as much as I enjoyed making it :D
My Story
My obsession with food started in 3rd grade. My mom's friend came over and brought her daughter too. We then talked about how I had never baked a cake from scratch and she was shocked. So, we promptly went to the store, bought a bunch of ingredients, all of which I didn't know the name of, and started mixing them. I thought it was magic. The way she mixed all those ingredients with such concentration. 8 year old me was shocked at the precision and she did it all without a recipe! After a bunch of mixing and me staring at her in awe, she poured it all into a baking tin and put it in the oven for 25 minutes. Those 25 minutes felt like an eternity and finally, she used an oven mitt to take out the magnificent, fluffy, and scrumptious chocolate cake ever.

I was in love with the taste and the process and was determined to replicate that process no matter what. My dad and I had baked cakes before, none from scratch and none that gave you this level of satisfaction after. So, that day I made it my goal to make a cake from scratch and make it look as pretty as she did. My dad and I bought all the ingredients and decided that we would make the cake the next day, but we forgot. We started putting it off and 8-year-old me was mad so I decided that one weekend when my mom was away, we were going to finally make a cake, and from scratch! That weekend, we made the cake and some cookies to go along with it and the satisfaction it gave us to make such a scrumptious thing, FROM SCRATCH, was otherwordly! It was a mindboggling experience and that is how my baking addiction began.

The idea for a blog was always lingering in the back of my mind, during quarantine, I decided that I would finally do it and almost made a blog but decided otherwise since I had a lot of schoolwork. As my school work increased, I started baking lesser and lesser, and finally, when I entered my junior year, I realized that I had put a hold on something that made me happy. I decided then, that I would start managing my time better and I would designate 1 day per week, just for baking and cooking. What better way to keep this promise to myself than by starting a food blog? This was how I came up with this idea :)

I want this page to be for people who have never experimented with food before due to a tight budget or people who don't have the time to experiment. I relate to these people on such a high level, with the price of ingredients going up and the amount of time I spend on baking reducing, I have created a bunch of time-saving, few ingredients healthy recipes that will blow your mind away with their taste and the negligable amount of effort you need to put into them. I hope you enjoy!
