Feta Spaghetti Squash!

Everyone has probably heard of the viral spaghetti squash, right? One day, while scrolling through her Instagram, my mom saw an influencer talk about it and told me about it. We looked up more information about this fascinating vegetable, and since we are sticklers for quick and healthy recipes, we simply had to try making it! This is our take on spaghetti squash!


Information:

  • Preparation time: 30 minutes

  • Cooking time: 30 minutes

Ingredients:

  • 1 medium-sized spaghetti squash

  • 16 cherry tomatoes

  • 1/4 cup chopped basil leaves

  • 3 cloves of garlic

  • Salt and pepper to taste

  • 4 tablespoons olive oil

Instructions:

  • Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.

  • Take the spaghetti squash and cut it in half lengthwise. Scoop out all the seeds and discard them. Place it on the parchment paper with the cut side up.

  • Break the feta block in half and place each half in the middle of the spaghetti squash. Place the cherry tomatoes and chopped basil leaves around the feta block.

  • Slice the garlic cloves and place them around the feta block too. Season with salt and pepper.

  • Bake until the feta block looks melty and golden brown around the edges and until the squash is fork-tender.

  • Use a fork to pull the inside of the squash apart. It will pull apart in strands and look like spaghetti. Stir it all together and enjoy!
