My version of Brownies!

Quarantine has affected everyone's cooking habits differently, some started cooking healthier while some ate the same food as before. My family was the family that switched to a healthier version of everything. We switched from flour to whole wheat flour, from sugar to jaggery, and from vegetable oil to olive oil. This recipe was inspired by the effect quarantine had on my family. It is made with jaggery, whole wheat flour, and all other healthy stuff.

  • Cooking time: 30 minutes

Ingredients

  • 3/4 cup wheat Flour

  • 1 cup coconut sugar

  • 1 teaspoon baking powder

  • 1/4 cup cocoa powder

  • A pinch of salt

  • 1/4 cup milk

  • 1/3 cup yogurt

  • 1/4 cup oil

  • 1/2 cup walnuts (optional)

  • 1/2 cup chocolate chips (optional)

Instructions

  • Preheat the oven to 350°F. Grease a baking tin with oil or line with parchment paper to prevent the brownies from sticking

  • Take oil and coconut sugar in a bowl and whisk. Whisk until the coconut sugar is dissolved

  • Sieve the wheat flour, cocoa powder, and baking powder along with a pinch of salt.

  • Add curd and milk. Whisk again to incorporate. Do not over-mix.

  • Add the optional chopped walnuts and the chocolate chips and fold the batter to incorporate.

  • Pour the batter into the tin. Bake for 30 minutes or until a skewer inserted in the center of the cake comes out clean.

  • Let it cool before cutting into squares.
